
I have only had butternut squash once before and when a friend sent me one I had no idea how to use it. I called my oldest son and asked him what to do. He suggested roasting it with olive oil, oregano and garlic topped with Parmesan cheese.
Well, I roasted the squash but decided I needed something more for my husband. I fried some Italian sausage, drained the excess fat, added the butternut squash, garlic, oregano and basil, plus a little salt and pepper. I then added chicken stock and simmered. When I scooped it into my bowl I topped it with Parmesan cheese. It was so delicious but I couldnβt get my husband to try it.



Oh my. How could he resist? I can smell the yummy aroma from here across the cyberverse!
