What Do You Do With Extra Broccoli & Carrots?

How about some broccoli and cheese soup!

I received an abundance of broccoli and carrots, I love both but sometimes I am at a loss for how to prepare them.

I decided on a variation of broccoli and cheese soup. First chop some carrots and put into the crockpot on high, add chicken stock. I use a combination of water and Bone Broth, enough to cover.

I added broccoli flowerets and a small chopped eafter the pot was good and hot and turned it down on low.

When the broccoli was soft I added 1/2 cup dry milk. Since I rarely drink milk, I keep dry for cooking. Once milk is mixed well, I added 1/4 cup of soft cheese block used for nachos or cheese sauces. If cutting from the block, cut about an inch wide.

I added 1/2 cup shredded cheddar cheese and bacon bits to flavor.

You can put the soup into the food processor to make it smooth but I don’t mind the chunks.
