  2. My quick and easy recipe for shrimp and grits is a lighter version than what you’ll get most places.
    1 cup Quick Grits cook according to directions
    1 lb. cleaned and de-veined shrimp (I prefer tails off for easier eating)
    1 tablespoon of butter
    1 tablespoon minced garlic
    1 tablespoon chopped onion
    5-6 slices of bacon, fried crisp and crumbled
    1 can spicy tomatoes and green chilies
    1/2 cup shredded cheddar cheese

    saute shrimp in melted butter with onion and garlic until lightly pink, add can of tomatoes and bacon crumbles. Bring to a quick boil and removed from heat. Top grits with shrimp and soup, add shredded cheese.

    Easy and delicious.
